3717-1-05.1(I) / Service sink - number.
Repeat Observed no service sink or curbed cleaning facility as required.
At least one service sink or one curbed cleaning facility equipped with a floor drain shall be provided and conveniently located as specified in this rule. The toilet in the establishment's bathroom is currently used for the sanitary disposal of used mop water.
3717-1-06.1(I) / Light bulbs - protective shielding.
Corrected During Inspection Observed a light bulb over a food preparation table at the time of inspection that was not properly shielded.
To protect food from becoming contaminated with broken glass should a light bulb break, light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. PIC removed the light bulb at the time of inspection.
3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Repeat Observed items (papers, envelopes, etc) stored in ways that encroach upon working space.
Remove all items unnecessary to the operation of this establishment from the facility, and organize stored items so that they do not encroach upon workspace.

Comments
Observed proper handwashing and use of hair restraint at the time of inspection.
Establishment serves soup on a seasonal basis. There was no soup for sale by this establishment stored in the facility at the time of inspection. Discussed safe cooling procedures for soup. Establishment cools small batches of soup rapidly using ice or iced milk as an ingredient. PIC maintains a log where temperature and time are recorded for cooled soups. At the time of inspection, the log indicated that soups were cooled to acceptable temperatures within an acceptable amount of time. Remember that all TCS foods held refrigerated in the establishment for 24 hours or more must be marked with a "use by" date that does not exceed 6 days past the date of preparation.
Observed establishment has reduced the number of unnecessary items stored in the facility, and is better organized. Continue to make progress organizing paperwork and removing from the facility all items unnecessary to the daily operation of the establishment.
