[?] A summary of the violations found during the inspection are listed below.

3717-1-04.4(J) / Mechanical warewashing equipment - wash solution temperature.
Critical Observed the wash solution in the spray type warewasher was not being maintained at the proper temperature. Wash and rinse solution temperature gauge was observed to be reading below 120 degrees F at the time of inspection
To ensure proper cleaning and sanitization, the temperature of the wash solution in spray-type warewashers that use chemicals to sanitize may not be less than 120˚F. Provide water temperatures to meet the requirements of this rule.

3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Observed single-service and single-use articles were stored on the floor of the back storage room at the time of inspection.
Cleaned equipment and utensils, laundered linens, single-service articles, and single-use articles shall be stored: (a) In a clean, dry location; (b) Where they are not exposed to splash, dust, or other contamination; and (c) At least six inches (fifteen centimeters) above the floor. Store boxes or containers of portion cups, napkins, etc. to meet the requirement of this rule.

To ensure proper cleaning and sanitization, a warewashing machine shall be equipped to: (1) Automatically dispense detergents and sanitizers; and (2) Incorporate a visual means to verify that detergents and sanitizers are delivered or a visual or audible alarm to signal if the detergents and sanitizers are not delivered to the respective washing and sanitizing cycles.

Observed the kitchen to be very clean and organized at the time of inspection.
