3717-1-02.4(B)(2)(k) / PIC: Demonstration of Knowledge - Explaining correct procedures for cleaning and sanitizing
Critical Corrected During Inspection PIC unable to demonstrate knowledge of cleaning and sanitizing. Discussed three compartment sink usage and 4-hour warewashing of utensils/equiptment used with tcs foods.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Observed rubber gloves being stored in the sink and debris causing a slow drain (appearrs to be used as dump sink). Discussed hand sink usage with PIC.

3717-1-03.2(K) / In-use utensils - between-use storage.
Repeat In-use utensils improperly stored. In-use utensils improperly stored. Observed utensils being stored in dirty water. Utensils that are going to be stored in water shall have a temperature above 135 degrees F.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles not protected from contamination. Observed multiple boxes of items throughout the storage room stored directly on the floor.

3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. Observed non-commercial ice bin (small blue cooler) being used to hold ice on the prep table, strainer above three-compartment sink, refrigerator/freezer unit beside prep refrigeration unit, chest freezer, etc.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces not cleaned at the required frequency. Observed exterior of product containers, shelving throughout, items in storage, handwashing sink, three compartment sink, waffle makers and other equipment that is no longer used,etc. with an accumulation with food residue and debris.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Repeat Unnecessary or nonfunctional items on premises. Observed multiple equipment that is no longer used that shall be removed. Observed personal belongings stored throughout the facility, items shall be kept in a designated location away from the operation's products.

3717-1-06.4(A) / Repairing.
Physical facilities not maintained in good repair. Observed damaged and stained ceiling tiles in the bathroom, mechanical closet, both storage rooms and the dining area.

Ensure pitchers and shakers are being warewashed (washed,rinsed,sanitized,air dried) at least every 4 hours when in use.
Continue to organize and clean the hard to reach areas in the facility.

The violations documented shall be corrected and will be checked during next standard inspection.
