Comments
In order for a Food Service License to be issued to this operation the following must be completed:

Provide rest room doors (both men's and women's) to be self closing and self latching
Provide a coved base molding around the mop room. Recommend caulking along the floor and wall juncture before installing the coved base molding.
Seal the gap to the left of the mop sink.
Caulk along the base of the mop sink (create a coved finish)
Provide new door seals on all equipment that may need new seals (tall 2 door reach-in, short 2 door reach-in, and single door freezer, Milk cooler in basement)
Fix/seal the gap between the FRP and the corner molding to the right of the 3 compartment sink. Cover/seal the exposed drywall.
No commercial shelves over the 3 compartment sink must be replaced with a commercial grade (NSF approved or equivalent). This shelf will be used for air drying the utensils and equipment since the 3 compartment has not been provided with drainage boards on both sides.
Provide a hand washing (Employees Must Wash Hands) at the hand washing sink in the food preparation area.
Caulk and seal a corners of the pass through window. Seal all gaps to limit locations for food and debris to collect.
Seal the gap between the stainless steal (back splash to hot line) and the FRP board to the right/behind of the Fryers.
Shelves over the main preparation cooler are not commercial grade and shall be replace with commercial grade shelving (NSF or Equivalent). The shelves shall be smooth, durable, and easily cleanable. The current shelves that have been installed are designed for household closets.
Provide a proper air gap on the Coke dispensing equipment ice bin drainage. Limit the cross connection between the overflow drain and the ice bin drainage.
Provide a air gap on the drainage from the ice machine located in the basement. Drainage pipes shall not be installed directly on the floor. Pipes installed on the floor (less then 6 inches) may cause the floors to be hard to clean. Reinstall the drainage from the ice machine to meet this requirement. If the ice machine needs to be raised, recommend installing longer casters or use of bricks that have been painted/waterproofed.
All cold holding and hot holding equipment much be working properly and able to hold foods at acceptable temperatures.
Provide a sanitizer and the proper testing kit.
Provide a copy of a certificate of a Person In Charge (designated as the PIC) that has been properly certified in food safety.
Provide a Final build/fire approval for all permit that may have been pulled to complete the build. Provide a Certificate of Occupancy.
