Facility does not have an employee with manager certification in food protection.

3717-1-04.1(Y) / Temperature measuring devices.
Cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Observed missing thermometer for the cold holding unit in the infant area.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Improper storage of food items. Observed cleaning supplies, aerosol cans stored above products in the dry storage room.

3717-1-04.2(B)(1) / Manual warewashing - three compartment sink required.
Three-compartment sink not available for manually washing, rinsing, and sanitizing of utensils.

Comments
Discussed COVID-19 protocols (face coverings, social distancing, cleaning and sanitizing, sick policy, etc.) during the inspection.
Observed the reach-in refrigeration unit in the kitchen with overflowing product that was preventing the door from completely closing. Observed measured temperature of products at 42 degrees F. The PIC removed items from the unit to allow for it to close properly. Ensure product does not obstruct the door from closing to prevent potential temperature abuse of products.
Operation shall continue to operate with the restriction of not having a three-compartment sink but will need to update the plan on when a sink will be installed.
The violation documented shall be corrected and the critical violations/hood cleaning will be checked during the follow-up inspection.
