3717-1-04.2(I) / Sanitizing solutions - testing devices.
Observed no proper test kit available for measuring the concentration of the sanitizer at the time of inspection.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. Provide a proper test kit.
3717-1-06.1(I) / Light bulbs - protective shielding.
Observed light bulbs that were not properly shielded or coated where required at the time of inspection.
To prevent health hazards, light bulbs shall be shielded, coated, or otherwise shatter-resistant in areas where there is exposed food, clean equipment, utensils, or linens, or unwrapped single-service or single-use articles and does not apply in areas used only for storing food in unopened packages. Provide shielding to meet the requirements of this rule.
3717-1-06.2(B) / Handwashing cleanser - availability.
Observed no supply of hand cleaning liquid, powder or bar soap at the handwashing sinks in the back dry storage area and on the far wall behind the front service counter at the time of inspection.
To ensure proper cleaning of hands, each handwashing sink or group of two adjacent handwashing sinks shall be provided with a supply of hand cleaning liquid, powder, or bar soap. Provide hand washing soap for the two handwashing sinks.

Overall, the facility was very clean and well organized at the time of inspection.
A handwashing sink may not be used for purposes other than handwashing. All hand washing facilities shall be properly supplied at all times.
Drains in receptacles and waste handling units for refuse, recyclables, or returnables shall have drain plugs in place.

A letter requesting a drop in Risk Classification from a 3 to a 2 is needed. Indicate that there will be no risk level 3 activities that will occur.
A letter indicating that the primary hot water generator will be replaced with the proper sized unit when needed shall be submitted to the Health Department.
