[?] A summary of the violations found during the inspection are listed below.

3717-1-02.4(C)(2) / Person in charge: duties - ensure unnecessary persons are not allowed in food prep or storage areas.
Critical Observed The person in charge did not ensure that persons unnecessary to the operation were not present in food prep or storage areas. Observed multiple teachers were leading students through the back food storage room at the time of inspection
To prevent contamination, the person in charge shall ensure that persons unnecessary to the operation are not allowed in the food preparation, food storage or warewashing areas, except brief visits and tours may be authorized. Teachers shall not be using the storage rooms as a short cut to the gym/cafeteria. Person In Charged stated that she had tried to stop this from occurring in the past.
3717-1-03.2(N)(1) / Gloves - single use gloves
Critical Corrected During Inspection Observed single-use gloves being used improperly. Observed the food employee did not change gloves when gloves were contaminated by customers. Employee was handing food items to students with gloved hands and did not change gloves/wash hands when required.
To prevent contamination: If used, single-use gloves shall be used for only one task, used for no other purpose, and discarded when damaged or soiled or when interruptions occur in the operation. Food employee did change gloves and washed hands properly after the issue was discussed at the time of inspection.
3717-1-03.2(U) / Food display - preventing contamination by consumers.
Critical Observed food on display/student self service line was not properly protected from contamination by consumers at the time of inspection. Service line was not provide with a proper sneeze guard. Washed apples/fruits were not packaged (stickers were still on the apples).
To prevent contamination, except for nuts in the shell or whole, raw fruits and vegetables that are intended for hulling, peeling, or washing by the consumer, food on display shall be protected from contamination by the use of packaging; counter, service line, or salad bar food guards; display cases; or other effective means. A sneeze guard shall be provided on the self service line and all washed ready to eat foods shall be properly packaged.
3717-1-05.3(C) / Sewage and other liquid waste: Backflow prevention.
Critical Repeat Observed a direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Observed the facility was not provided with a designated a properly installed sink at the time of inspection for preparing ready to eat foods.
To prevent health hazards, a direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed unless allowed by the Ohio building code. Provide a food preparation sink that is properly installed with a in directly connected drainage to prevent contamination to foods. Until this sink is provided all foods that need to be washed shall be washed at the Stanton Middle school kitchen. Restrictions may be put on FSO license to restrict the preparation of unwashed foods

3717-1-03.4(C) / Thawing - temperature and time control.
Observed juice products were not properly thawed (left out at room temperature) at the time of inspection. Manufactures label states "Thaw under refrigeration".
To limit the growth of harmful organisms, TCS food shall be thawed: (1) Under refrigeration that maintains the food temperature at 41˚F less; (2) completely submerged under running water at a water temperature of 70˚F or below, with sufficient water velocity to agitate and float off loose particles in an overflow, and for a period of time that does not allow the food to exceed 41˚F.
3717-1-06.1(M) / Outer openings - protected.
Repeat Observed an outer opening door without proper protection against the entry of insects and rodents. Observed back door to the kitchen was not self-closing at the time of inspection.
To prevent contamination, outer openings of an FSO shall be protected against the entry of insects and rodents as specified in this rule. Provide the back door to kitchen to be self-closing, self latching and tight-fitting.

Observed food employee sanitizing the metal stem temperature measuring device between each temperature check.
Observed multiple lunch staff properly washed their hands upon arrival to work.
Recommend that the lunch tables are sanitized before the first lunch period and between each lunch service.
