Repeat Observed final rinse water thermometer for the mechanical warewashing equipment not accurate.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Single-service and single-use articles not protected from contamination. Observed foam trays removed from original packaging at the main serving area and single use items not protected in the dry storage room (foam cups, plates,etc.)

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed an accumulation of food residue and other debris for the following surfaces: 1) gaskets/door handles for refrigeration units throughout the facility. 2) Lids of coleman coolers at the receiving area. 3) Exterior lid of the ice machine. 4) Crescor warming units throughout the facility. 5) floor mats in the walk-in freezer.

3717-1-05.1(S) / Plumbing system - maintained in good repair.
Plumbing system not properly maintained or repaired. Observed leaking hot water handle for the hand sink near the deli serving area. Observed faucet for the prep sink near the ice machine building up calcium and in need of cleaning.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Floors under prep tables and floor drains throughout (specifically under prep sink and warewashing machine) not maintained clean.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Repeat Unnecessary items on premises. Observed deli slicer, multiple crescor hot holding cabinets and other equipment that is no longer used in the facility (specifically in the warewashing room).

Warewashing machine appears to need a de-lime cycle ran through the machine.
Investigate ice build that is beginning to appear in the walk-in freezer. Ensure products are not being stored under dripping condensation lines.
Floors that are no longer smooth and easily cleanable shall be repaired. Observed large cracks in the walk-in freezer.
The violations documented shall be corrected and will be checked during next standard inspection.
