3717-1-04.6(B) / Sanitizing frequency of utensils and food-contact surfaces - before use and after cleaning
Critical Corrected During Inspection Utensils and food-contact surfaces of equipment not sanitized at the required frequency. Observed mechanical warewashing machine not dispensing the correct amount of sanitizer. PIC filled up the third compartment of the three-compartment sink and washed and sanitized the previous dishes that were sanitized with the mechanical warewashing machine. The three-compartment sink shall be used until the mechanical warewashing machine is functioning properly

3717-1-04.1(KK) / Food equipment - certification and classification.
Repeat Observed cold holding refrigeration/freezer, range/stove and other noncommercial small appliances that were not approved by a recognized testing agency present in the kitchen at the time of inspection.

3717-1-04.4(E) / Warewashing machines - manufacturers' operating instructions.
Warewashing machine not operated according to the manufacturer's instructions. Observed machine only being used to sanitize equipment and utensils. Ensure household bleach is permitted to be used in the machine. Approved sanitizers shall be used in the machine. Observed machine needing delimed and PIC stated they will delime the machine and contact someone to service the machine.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed an accumulation of food residue and other debris on the cereal containers in the back classroom where the cold holding equipment for student lunches are. Ensure product is emptied and warewashed before more product is put in the containers.
