3717-1-05.1(L) / Handwashing sinks - location and placement.
Critical The Handwashing sink(s) are not located to allow convenient use by employees. Observed that there is no handwashing sink behind the bar.
A handwashing sink shall be located to allow convenient use by employees in food preparation, food dispensing, and warewashing area, and in, or immediately adjacent to, toilet rooms. Install a handwashing sink behind the bar to encourage employees to wash hands.

Critical The Handwashing sink(s) are not located to allow convenient use by employees. Observed that there is no handwashing sink located in the kitchen of the facility. Hands are a common vehicle for the transmission of pathogens to food. Proper handwashing reduces the risk of contamination to food.
A handwashing sink shall be located to allow convenient use by employees in food preparation, food dispensing, and warewashing area, and in, or immediately adjacent to, toilet rooms. To encourage employees to wash hands, install a handwashing sink in the kitchen.

3717-1-03.2(M) / Wiping cloths - use limitation.
Observed improper use and/or maintenance of wiping cloths. At the time of inspection, observed wet wiping cloths that were not being stored submerged in sanitizer between uses.
Cloths that are in use for wiping food spills from tableware and carry-out containers shall be maintained dry and used for no other purpose; cloths in use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer, or laundered daily; cloths used with raw animal foods shall be kept separate from other cloths, dry cloths and solutions shall be free of food debris and visible soil; containers of sanitizer solutions shall be stored off the floor, and used in a manner that prevents contamination. Single-service articles, single-use articles or single-use disposable sanitizer wipes shall be used in accordance with EPA - approved manufacturer's label use instructions.
3717-1-05.1(I) / Service sink - number.
Observed no service sink or curbed cleaning facility as required. There is no service sink in the facility.Operator stated that mop water is disposed of in the toilet. Mop water and other liquid wastes are contaminated with harmful organisms that must be disposed of in a sanitary manner. A service sink allows for the sanitary disposal of mop water and other liquid wastes.
At least one service sink or one curbed cleaning facility equipped with a floor drain shall be provided and conveniently located as specified in this rule. Install a service sink for the sanitary disposal of mop waster and similar liquid wastes.
3717-1-05.4(B) / Outdoor storage surface.
Outdoor refuse storage surface is not properly constructed, and sloped to drain. Observed outdoor refuse storage container is stored on a gravel surface. Gravel surfaces are not easily cleanable. Garbage and food debris that cannot be cleaned is an attractant for pests such as rodents and insects.
An outdoor storage surface for refuse, recyclables, or returnables shall be constructed of nonabsorbent material and shall be smooth, durable, and sloped to drain. Provide an appropriate storage surface for the outdoor refuse storage container that meets the requirements of this rule.
