3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked (turkey, kale, and lettuce). Education was provided to improve date marking procedures.

3717-1-03.2(G) / Washing fruits and vegetables.
Raw fruit and/or vegetables washed improperly in the 3-compartment sink due to a broken food preparation sink.

3717-1-03.2(K) / In-use utensils - between-use storage.
In-use utensils improperly stored. Fruit scoop handles were in contact with food. Single use plastic ware handles were stored incorrectly.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean (freezers and cold holding equipment).

3717-1-06.4(A) / Repairing.
The food preparation sink is out of order due to a broken drain.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Floors throughout the facility not maintained clean in the hard to reach areas.

The food preparation sink is currently out of order due to a damaged drain. The PIC stated that it was scheduled to be repaired today. Produce will be washed with a strainer in the 3-compartment sink until the food preparation sink is repaired.
