Very clean kitchen. Proper food safety was discussed with the PIC (hand washing, ware washing, date marking, sick policy, etc.). Proper date marking for TCS food is for a maximum of 7 days; counting day one as the day of preparation. For example, ham prepared on 7/5/18 shall be used by 7/11/18. |
