Critical Person in charge did not ensure their employees are properly trained in food safety. Observed multiple TCS foods with improper date marking at time of inspection. Education was provided to improve date marking procedures.

3717-1-02.4(C)(15) / PIC: duties - ensure employees are informed in a verifiable manner of their responsibility to report their health information
Critical Employees are not informed in a verifiable manner of their responsibility to report information about their health. At time of inspection, the employee sick policy was not available for review and staff was unable to demonstrate compliance. Education was provided about a proper employee sick policy.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Ready-to-eat, TCS food not properly discarded when required. Multiple TCS foods were stored in the cold holding units beyond acceptable dates (steak prepared 8/19, brisket prepared 8/30, gyro prepared 9/3). The PIC immediately and voluntarily discarded the foods once the violation was identified. Education was provided to improve date marking procedures.

Critical Repeat Refrigerated, ready-to-eat, TCS foods not properly date marked (spinach, lettuce, steak, brisket). Education was provided to improve date marking procedures.

FSO did not have a person in charge per shift with the person in charge certification in food protection.
