[?] A summary of the violations found during the inspection are listed below.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Corrected During Inspection Handwashing sink is being used for purposes other than handwashing. Observed cleaning and sanitizing buckets stored in the hand sink near the entrance of the kitchen. PIC removed buckets and stated they rarely use sink since that part of the kitchen is not being used for service.

3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Observed open bag of spinach in the walk-in past the 7 day date mark. PIC voluntarily discarded product and said it was sent back from one of the elementary schools.

3717-1-04.5(G) / Loading of soiled items in warewashing machines
Soiled items not properly loaded into warewashing machine. Observed sheet pans not being placed inverted on racks to ensure the pan does not hold water when the cycles are finished.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed an accumulation of food residue and other debris for the following surfaces: 1) gaskets/door handles for refrigeration units throughout the facility. 2) Red coleman coolers (used for transport). 3) Crescor warming units throughout the facility. 4) floor mats in the walk-in freezer. 5) Shelving throughout the facility.

3717-1-06.4(N) / Maintaining premises - unnecessary items and litter.
Repeat Unnecessary items on premises. Observed deli slicer, multiple crescor hot holding cabinets and other equipment that is no longer used in the facility (specifically in the warewashing room).

3717-1-06.1(A) / Floors, walls, and ceilings.
Floors in the walk-in freezer not smooth and easily cleanable.

Comments
Ensure products are not being stored under dripping condensation lines in the walk-in freezer.
Observed large cracks on the flooring in the walk-in freezer. Cracks appear to be getting larger.
Floors that are no longer smooth and easily cleanable shall be repaired.

Observed facility changing milk suppliers and new equipment is being installed for cold holding. Two new pieces of equipment: make: True model #: TMC-34-S and TMC-58-S

The violations documented shall be corrected and will be checked during next standard inspection.
