[?] A summary of the violations found during the inspection are listed below.

3717-1-03.2(N)(1) / Gloves - use limitation
Critical Corrected During Inspection Single-use gloves used improperly. Observed employee not changing gloves after washing vegetables and after returning to work in the kitchen after leaving. PIC discussed glove use with employee.

3717-1-05.3(C) / Sewage and other liquid waste: Backflow prevention.
Critical Direct connection between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed. Observed tomatoes being washed in the three-compartment sink that is directly connected to the sewage system at the time of inspection. Vegatables and fruits shall be recieved pre-washed or a food preparation sink shall be installed with a proper air gap.

3717-1-06.1(M) / Outer openings - protected.
Repeat Observed an outer opening door without proper protection against the entry of insects and rodents. Observed back door to the kitchen was not self-closing at the time of inspection.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed the can opener and the area around the can opener with an accumulatino of food debris and dirt at the time of inspection.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Unclean nonfood-contact surfaces. Observed the air drying rack with an accumulation of food debris and dirt at the time of inspection. Ensure air drying rack is not being used for dirty dishes (air drying rack is next to the Wash compartment of the 3-compartment sink).

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris along the perimeter (wall and floor junctures) of the kitchen specifically near the handwashing sink and the oven at the time of inspection.
