Non-food contact surfaces of equipment are unclean. Multiple pieces of equipment are not clean (cooking equipment, chip warmer, cold holding equipment, salsa bar, sinks, ice machine, tables, storage racks and shelving).

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Facility not maintained clean. Floors throughout the FSO are not clean under equipment and in the hard to reach areas.

Complaint on 14-Jun-2019 :

A complaint inspection was conducted on 6/14/19 in response to a recent customer complaint. The customer was concerned about inadequate cleaning at Fresco and improper sponge usage by the staff.

All violations documented during this complaint inspection will be followed-up on during the next standard inspection.

The PIC was informed of the cleaning violations documented during the inspection. The staff began to clean the FSO at time of inspection. The PIC stated that a more thorough cleaning schedule would be implemented.
Proper food safety procedures were discussed with the PIC (sponge usage, wet wiping cloth maintenance, cleaning, etc.).
