3717-1-04.2(A) / Equipment - cooling, heating, and holding capacities.
Inadequate equipment available for cold holding at the new raw chicken breading station. The new cold holding containers have not been approved because they do not use mechanical refrigeration.

3717-1-03.2(K) / In-use utensils - between-use storage.
In-use utensils improperly stored. Scoop handles were in contact with food (chicken, cheese, lettuce, etc.).

3717-1-06.4(A) / Repairing.
Repeat Multiple light bulbs and light shields are in disrepair in the kitchen.

3701-21-25(I) / Person in charge certification in food protection
FSO did not have a person in charge per shift with the person in charge certification in food protection.

Very clean FSO and knowledgeable PIC.

The FSO is using a new procedure for breading raw chicken without the use of mechanical refrigeration. The current procedure can not be approved at this time, but there are two possible solutions:
1. Provide mechanical refrigeration for the chicken and breading.
2. Increase the FSO to a risk class 4 and begin using an approved TILT (time in lieu of temperature) procedure.
