Complaint on 12-Nov-2015 :
Manager was aware of the complaint and there was an explanation giving to the Complainant on the day of the complaint.
The complainant was concerned about the improper handling of the Raw pork sausage with bare hands and then Ready to eat cheese was then handled without proper a hand washing or gloves use by the food employee.
Observed the sausage that is in question to be a fully cooked product. The Sausage is full cooked by the operator before it is prepared (portioned labeled and dated) for use on the service line. Manager stated that the sausage was cooked/re-heated to 165 degrees F or above per ordered.
All the food employees were observed to be properly handling foods with utensils and proper use of gloves.
Complaint was discussed with managers and food employees. Preparation process was observed. No violations regarding this complaint were observed at the time of inspection. Manager stated that the staff has been all trained in the proper use of gloves and the importance of hand washing. Training is completed at the time of hire and multiple times throughout the year.
Complaint will be closed.
