[?] A summary of the violations found during the inspection are listed below.

3717-1-04.1(KK) / Food equipment - certification and classification.
Equipment not approved by a recognized testing agency. Observed non-commercial refrigerator/freezer unit in the dry storage room used for the operation. Observed crockpot and tupperware in the cabinet under the prep table, PIC stated these items are from previous employees and are not used.

3717-1-04.2(B)(1) / Manual warewashing - three compartment sink required.
Three-compartment sink not available for manually washing, rinsing, and sanitizing of utensils. The trays used in the countertop combination oven are not able to be cleaned properly. Ensure disposable and single use items are being used.

Ensure single use articles are being stored protected or left in there original packaging.
Ensure items are being stored up off the floor for easy cleaning and protecting items.
Flooring that is no longer smooth and easily cleanable shall be repaired/replaced.
The bottom shelves of shelving units shall be installed up off the floor at least 4 inches for easy cleaning.

The violations documented are to be corrected and will be checked during next standard inspection.
