The person in charge properly applies restrictions and exclusions for ill employees.
PIC is familiar with signs and symptoms of illnesses for which employees should be excluded from working with food. Discussed specific reportable illnesses, such as norovirus, Hepatitis A, and others. Please contact the City of Kent Health Department if employee(s) are diagnosed with any illness listed in 3717-1-02.1 of the State of Ohio Uniform Food Safety Code.

Food employee was demonstrating good hygiene practices.
Operation has designated specific areas for eating and for smoking. Hand sanitizer is available at handwashing sinks. Hand sanitizer may be used after properly washing hands. Please ensure sanitizer is dry before donning gloves and working with food.

Observed multiple food employees washing hands prior to donning single use gloves.
Handwashing stations were properly located and provisioned.
IV - P / Demonstration of Knowledge
The person in charge demonstrated knowledge of food safety at the time of inspection.

Person in charge stated there have been no change to food supplier.

VI - P / Time/Temperature Controlled Safety Food
Observed hot foods being held at 135°F or above; cold foods being held at 41°F or below.
Observed frozen food items were thawed under refrigeration in the walk in cooler.
VII - P / Protection from Contamination
Foods are protected from physical and environmental contamination during storage, holding and display.
Ensure that accumulated dust on all surfaces above cooking areas is cleaned to prevent contamination during preparation.
