Comments
I. There have been no recent employee illnesses. Illness policy is covered during training utilizing an online course.
II. Observed employees using appropriate hair restraint and gloves.
III. Observed proper handwashing at sinks throughout kitchen.
IV. PIC demonstrated excellent knowledge in food safety.
V. All food comes from McLane.
VI. All observed foods were held at an appropriate temperature. Refried beans, chicken, beef, and nacho cheese are cooled in small portions in an ice bath before placed in refrigerated storage. Portions are reheated following day to 165 degrees Fahrenheit within 30 minutes. No food is reheated more than once.
VII. Food is stored appropriately.
Procedures appear sound.
