3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Equipment components are not intact, tight or properly adjusted. Observed the three-door refrigeration unit holding foods above 41 degrees F (50). PIC removed TCS foods and placed them into the milk refrigeration unit that was holding milk below 41 degrees F at the time of inspection.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Repeat No sanitizer test kit available.

3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Repeat Non-food contact surface not cleaned at the required frequency. Observed the air drying rack with an accumulation of food residue and debris.

3717-1-03.4(F)(1)(b)/Time/temperature controlled for safety food - cold holding.
TCS foods not being cold held at the proper temperature in the three-door refrigeration unit (50 degrees F). PIC stated the refrigerate temped below 41 degrees in the morning and will pull the tcs foods until the unit can be serviced by a refrigeration company.
Comments
The TCS foods were being cold held in the milk refrigeration unit.
Observed TCS foods measured below 41 Degrees F at the time of inspection.
Per discussion with PIC, The three-door refrigeration unit is scheduled to be serviced.
The three-door refrigeration unit shall not be used to store TCS foods until its capable of holding under 41 degrees F.

A follow-up inspection will occur on September 26, 2022 to check the three-door refrigeration unit.
