3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Observed ready-to-eat, TCS food (ranch dressing, southwest dressing) at the time of inspection that had been date marked was not properly discarded when required.
To prevent illness refrigerated, ready-to-eat TCS food that has been date marked in the facility shall be discarded if it exceeds the temperature or time except the time the food is frozen, is in a container or package that does not bear a date or day, or is marked with a date or day that exceeds the time and temperature combination as required in this code. Discard all RTE, TCS foods with expired datemarking.
3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Repeat Corrected During Inspection Observed handwashing sink behind bar was being used for purposes other than handwashing at the time of inspection.
A handwashing sink may not be used for purposes other than handwashing.
3717-1-07.1(A) / Storage: separation.
Critical Corrected During Inspection Observed improper storage of poisonous or toxic materials (stainless steel cleaner and Febreeze canister on top of ice bin) at the time of inspection..
Poisonous or toxic materials shall be stored so they cannot contaminate food, equipment, utensils, linens, or single-service or single-use articles . Employee removed the canisters at the time of inspection.

3717-1-03.2(M) / Wiping cloths - use limitation.
Observed improper use and/or maintenance of wiping cloths (wet wiping cloths stored on food prep surfaces between uses) at the time of inspection..
Cloths that are in use for wiping food spills from tableware and carry-out containers shall be maintained dry and used for no other purpose; cloths in use for wiping counters and other equipment surfaces shall be held between uses in a chemical sanitizer, or laundered daily; cloths used with raw animal foods shall be kept separate from other cloths, dry cloths and solutions shall be free of food debris and visible soil; containers of sanitizer solutions shall be stored off the floor, and used in a manner that prevents contamination. Single-service articles, single-use articles or single-use disposable sanitizer wipes shall be used in accordance with EPA - approved manufacturer's label use instructions.
3717-1-04.8(A) / Equipment and utensils - air-drying required.
Observed equipment (beverage and food containers) were not being air dried at the time of inspection.
After cleaning and sanitizing, equipment and utensils shall be air-dried or used after adequate draining before contact with food and utensils, and may not be cloth dried.
3717-1-06.4(F) / Drying mops.
Observed mops being dried using an unapproved method at the time of inspection.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. Use wall mounted brackets for hanging mops to dry.
