3717-1-03.4(I)(1) / Time as a public health control - written procedures
Observed time as a public health control was being used (TCS foods on ice) without the proper written procedures at the time of inspection.
To prevent the growth of pathogens: If time without temperature control is used for TCS food before cooking, or for ready-to-eat TCS food that is displayed or held for sale or service, written procedures that specify methods of compliance with this rule shall be prepared in advance, maintained in the FSO or RFE, and made available to the licensor. Develop a written procedure outlining the steps used for dealing with TCS products being held on ice (termination policy).
3717-1-03.5(C)(1) / Food labels - packaged food
Observed food packaged in the facility for customer self-service (salsa, carrots, peppers, etc.) that did not contain a label at the time of inspection.
To properly inform consumers, foods shall be labeled as specified in this rule. Provide common identity label for packaged food items that did not contain labels.
3717-1-04.4(Q) / Utensils, temperature and pressure measuring devices - good repair and calibration.
Repeat Observed the final rinse thermometer gauge for the warewashing machine not kept in good repair or calibration at the time of inspection.
To ensure equipment is functioning properly, water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. Repair or replace final rinse temperature gauge to meet the requirements of this rule.
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Observed boxes of single-service and single-use articles were not properly stored in multiple location throughout the facility (on the floor) at the time of inspection.
To prevent health hazards, single-service articles and single-use articles shall be properly stored: (a) In a clean, dry location; (b) Where they are not exposed to splash, dust, or other contamination; and (c) At least six inches (fifteen centimeters) above the floor unless the items are kept in closed packages on dollies, pallets, racks, and skids that are designed as specified under paragraph (II) of rule 3717-1-04.1 of this code. Discontinue storing boxes of single use items on the floor.
3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
Observed the plumbing system for the hand sink located at the pizza serving area not properly maintained (slow drain) at the time of inspection.
To ensure proper handwashing, the hand sink at the omelet station shall drain properly. A plumbing system shall be properly maintained. Repair the hand sink.
