[?] A summary of the violations found during the inspection are listed below.

3717-1-02.4(C)(11) / PIC: duties - ensure employees are proplery sanitizing cleaned equipment and utensils
Critical PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Multiple employees stated the pitchers were being rinsed during the day and being cleaned and sanitized during night shift. Ensure the required 4-hour warewashing is occuring when pitchers are in use.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical TCS foods not being cold held at the proper temperature. Observed containers of italian romano and fire roasted on the prep line out of cold holding. Containers state "keep refrigerated", please provide documentation the dressings are shelf stable or ensure products are being held below 41 degrees F.

3717-1-03.2(Y) / Miscellaneous sources of contamination.
Corrected During Inspection Observed the dispensing tube not cut at a proper length for the customer self-service area for the creamers held in the fresh chilled cream equipment. PIC cut the tube at the proper length as stated inside the equipment (step #6).

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Non-food contact surfaces of equipment are unclean. Observed an accumulation of food residue and debris on the containers that hold in-use utensils throughout the prep line.

3717-1-05.1(S) / Plumbing system - maintained in good repair.
Plumbing system not properly maintained or repaired. Observed hand sink near the front register in disrepair.

3717-1-05.4(P) / Maintaining refuse areas and enclosures.
Improperly cleaned storage area for refuse, recyclables, or returnables. Observed litter scattered throughout the property.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Floors at the cook/prep line were not maintained clean.

Complaint on 30-Nov-2022 :
A standard and complaint inspection was conducted.
Per complainant: Excessive amounts of trash/litter throughout the property and parking lot. Trash cans overflowing. Trash blowing into adjacent properties and roadway.
Complaint findings: Observed trash scattered throughout the property. See observation in the observations and corrective actions section of the report.
Per discussion with PIC, they will increase there outside cleaning to ensure the property is free of trash and litter.

The ingredient list for the products in the customer self-service dessert case shall be in plain view for the customer to review.
Damaged gaskets shall be replaced to allow for easy cleaning and equipment to function properly.
Ensure Pina Colada island Oasis product is being dated for 21 days unopened when pulled from freezer.
The violations documented shall be corrected and will be checked during the follow-up inspection.
The follow-up inspection is scheduled for Tuesday, December 20th.
