3717-1-03.4(H)(1) / Ready-to-eat, time/temperature controlled for safety food - disposition.
Critical Corrected During Inspection Ready-to-eat, TCS food not properly discarded when required. Ham with a discard date of 9/11 was stored in the walk in cold holding unit. The PIC immediately and voluntarily discarded the food once the violation was identified.

Critical Repeat Refrigerated, ready-to-eat, TCS foods not properly date marked. Multiple foods (sausage, steak, meatballs, ham) are improperly date marked with an 8-day date mark. Education was provided to the PIC.

Critical Improper use of a poisonous or toxic substance. Unapproved pesticide was in the storage closet (wasp spray) at time of inspection. Education was provided at time of inspection.

Kitchen floors are not clean.
