3717-1-03.4(F)(1) / Time/temperature controlled for safety food - hot and cold holding.
Critical Corrected During Inspection Observed TCS pumpkin rolls were not being held at the proper temperature at the time of inspection.
To prevent the growth of pathogens, except during preparation, cooking, or cooling, or when time is used as a public health control, TCS food at 41°F or less. Provide documentation that the pumpkin rolls are shelf stable and do not require cold holding. Until this documentation is provided, the manager agreed to store the pumpkin rolls under cold holding. Display items shall be label "Display Only" and never served to the customers. The pumpkin rolls will require a 7 day date mark for discard.

3717-1-04.2(I) / Sanitizing solutions - testing devices.
Observed no to be test kit available for measuring the concentration of the sanitizer that was in-use at the time of inspection.
To ensure proper sanitization, a test kit or other device that accurately measures the concentration in PPM (mg/L) of sanitizing solutions shall be provided. Observed a Chlorine testing test at the time of inspection. The operation was using a quaternary ammonia sanitizer. Provide a proper test kit for testing quaternary ammonia sanitizer solutions. Avoid handing customers bulk containers of soy milk from the main cold holding storage unit. Recommend the employee provide the service of pouring creamers and milks or provide all options at the customer self-service counter. Once the creamers are provided at the customer self service counter, creamers may not be carried over to the next service and must be discarded.
Creamers and Milk products at the customer self service counter shall be monitored frequently enough to ensure that the products are holding at 41 degrees or below. Recommend developing a policy/procedure to ensure that this requirement is met.

Observed facility to be very clean and well organized.
