Complaint on 20-Aug-2023 :
Regarding Complaint : Phone call received from KPD dispatch regarding fire grease in the FSO, Fire Department required health inspection before re-opening. REHS staff was not available to inspection at the time of call.

Due to staffing issued, the complaint was handled via phone and text with the Manager of the FSO.

A small fire occurred in the Fryer vent due to chips falling into vent while staff pour chips in to fryer during preparation. Staff used a dry chem. extinguisher which fair to put the fire out. KFD was called who put out the fire. KFD requested/required a health inspection before the FSO could reopen.

Via Phone - Manager was questioned and consulted with on their response. All food was discarded (waste log), everything in the kitchen was to be wiped down, ran through dish washer or 3 compartment sink. Dish machine was checked and all chemical was good. All Food preparation surface were to be washed, rinsed and sanitized. Manager was able to walk through the processes and provide proper responses to the REHS questions. REHS stated that there currently was no REHS available to inspect and to please contact them when the FSO was ready to reopen.


5:08 PM - Manager texted REHS that the FSO was ready to reopen. Provided photos showing the facility was clean. Food was re-prepared. Based on the time, the REHS was okay with them reopening if KFD was okay with a Fire Safety of the FSO.

6:30 PM - REHS was able to make it into the FSO to review the facilities, damaged and verify that the pictures were true. Observed the FSO to be be cleaned. Observed the fryer to be removed from the FSO. Observed a smaller table top fryer which was discussed as being needed for a few menu items. It was recommended that the countertop fryer be moved to the hood or no used until fire safety approves. Inspected the dish machine which was in compliance. Observed the facility to be free of chemical dust and looked to be in proper working order to be open. REHS did not see any reasons to have the FSO close or reason to believe the FSO did not follow through on their clean up response.

7:45 PM - REHS asked that a SOP be created for ensure staff is trained on how to handle a fire, and how to responded. A follow-up inspection will be completed Monday with the Fire Safety Inspectors.
