3717-1-02.4(C)(11)/PIC: duties - ensure employees are proplery sanitizing cleaned equipment and utensils
PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. At time of inspection, the 3-compartment sink was in disrepair and there was no sanitizer available to properly ware wash. Education was provided to improve ware washing procedures.

Equipment food-contact surfaces or utensils are unclean (deli slicer and dough equipment). Education was provided to improve cleaning procedures.
3717-1-04.4(N)(3)/Manual and mechanical warewashing equipment, chemical sanitization (quaternary ammonium) - temp., pH, concentration, and hardness
Quaternary ammonium sanitizing solution was not available at the 3-compartment sink for proper sanitizing. Education was provided to improve ware washing procedures.

Presence of live insects. Observed a large population of flies near the food preparation sink at time of inspection. Provided education about proper pest control to help reduce fly population.

Outer opening not protected from pests. The rear door was propped open for an extended period of time during the inspection allowing for potential pest intrusion.

Improper placement of insect control devices. Fly tape was installed over an area where clean food contact equipment was stored.

Non-food contact surfaces of equipment are unclean (cold holding equipment, storage racks and shelving.)

Improperly cleaned storage area for solid waste. The dumpster is over-flowing with solid waste and excess litter is scattered nearby.
