Complaint on 18-Nov-2014 :
Regarding complaint: It was reported that a party of 4 became ill approximately 3 hours after eating at this food service operation. Violations observed at the time of inspection were documented in the standard inspection report.
Discussed complaint, hand washing, and food handling procedures with the person-in-charge. PIC demonstrated knowledge of food safety.
Observed employees working with food at the time of inspection were washing hands properly at appropriate times. Multiple time/temperature controlled for safety foods were observed stored or otherwise holding at acceptable temperatures.
Boneless wings are stored frozen. Observed employee using gloved hands to place frozen wings directly in the fryer basket at the time of inspection. Bone-in wings are stored under refrigeration. Employees are required to don specific gloves before handling raw chicken, and discard gloves when finished. Wings are cooked to an internal temperature that is 165 degrees or higher. A metal stem thermometer used for measuring food temperatures is calibrated weekly.
Warewashing equipment was in working order and sanitizing properly at the time of inspection.
