We discussed date marking TCS foods, especially hotdogs and cut lettuce after opening the packages.
All frozen foods are thawed under refrigeration.
Person In Charge demonstrated great knowledge in food safety.
We discussed the employee sick policy and employee sick log.
Observed excellent use of gloves and hand washing.
