Observed the final rinse temperature gauge on the warewashing machine that was not kept in good repair or calibration at the time of inspection.
To ensure proper sanitation, water temperature measuring devices shall be maintained in good repair and be accurate within the intended range of use. The final rinse temperature dial shall be maintained in good repair.

To ensure equipment is functioning properly, a properly designed temperature measuring device as specified in this rule shall be located in the warmest part of a cooling unit. Provide a temperature measuring device for this unit to meet the requirements of this rule. |
| 3717-1-05.3(C)/Sewage and other liquid waste: Backflow prevention. Observed a direct connection between the sewage system and a drain originating from the food preparation sink in which food, portable equipment, or utensils are placed at the time of inspection. To prevent health hazards, a direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed unless allowed by the Ohio building code for: a warewashing machine between its waste outlet and a floor drain when the machine is located within five feet (1.5 meters) of a trapped floor drain and the machine outlet is connected to the inlet side of a properly vented floor drain trap; or a warewashing and culinary sink. Provide an air gap for the preparation sink to meet the requirements of this rule. |
| 3717-1-06.2(I)(1)/Lighting - intensity (10) Observed the measured light intensity in the basement walk-in cold holding unit (0 fc) was less than ten foot candles at the of inspection. To encourage cleaning and for safety, the light intensity shall be at least ten foot candles (one hundred eight lux) at a distance of thirty inches (seventy-five centimeters) above the floor, in walk-in refrigeration units. Provide proper lighting to meet the requirements of this rule. |
