[?] A summary of the violations found during the inspection are listed below.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection TCS foods not being cold held at the proper temperature. Observed expired TCS products (sandwiches, salads) and 2 containers of creamers out of refrigeration and measured above 41 degrees F. PIC stated the sandwiches and salads are being donated and a person was scheduled to pick them up and has not arrived yet. PIC stated they will cotnact the person picking up the donated foods and will place the tcs products back in cold holding. Discussed discontinuing leaving insulated containers of creamers for extended periods of time (product needs to be measured below 41 degrees F at all times unless a tilt procedure is developed and license risk level would need to increase to risk 4).

Repeat Insufficient storage space provided for soiled and clean items.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed strainer and door/gasket of the high temp dish machine and the black cart near the three-compartment sink not maintained clean.

3717-1-06.4(B) / Cleaning - frequency and restrictions.
Floors throughout specifically around the three-compartment sink not maintained clean.

Comments
The paper towel dispenser and soap dispenser were empty at the handwashing sink and PIC stated they are unable to find the key to refill them.
Observed hand soap and paper towels at three compartment sink. Handwashing shall only occur at the hand sink.

The violations documented shall be corrected and will be checked during next standard inspection.
