Comments
This inspection was completed per the request of the new owners. A plan review was submitted to change the owner on license. The following issues were observed and shall be completed before the change can be approved:
1) Provide soap, hot and cold water, paper towels in dispenser at each hand washing sink.
2) Provide a proper air gap on the drainage from the Soda Dispensing machine drain lines. All 3 drainage pipes shall be air gapped under the front hand washing sink.
3) Repair the leaking filter system under the front counter.
4) The Grease Interceptor or Trap shall be service and inspected by a licensed plumber to ensure its properly functioning
5) Replace all damaged or non kitchen grade ceiling tiles throughout the food preparation area. Provide kitchen grade ceiling tile above the fryer area.
6) Repair the walk-in freezer to hold frozen food below 10 degrees F.
7) Provide proper lighting of 10 foot candles in the walk-in freezer and cooler.
8) Repair or replace the back door to be self-closing and self latching. Ensure the bottom threshold/weather strip is tight.
9) Begin phasing out the non-commercial food containers with NSF or similar testing agency approved containers or leave the food in the original packaging or store foods in food grade bags in the non food containers.
10) Seal all plumbing and wall junctures to limit pest migration. Under the food prep sink, by the 3 compartment sink, etc.
11) Caulk the sink in the employee restroom to the wall.

The following items can be completed at a later time when the owner is able to make necessary changes:
1) Replace the closet maid shelving over the 3 compartment sink with NSF or equivalent testing agency approved shelving. Closet Maid shelving is fine to store dry stock but not for a air drying rack or clean utensil/equipment storage.
2) Contact the solid waste haulers to replace the existing dumpster with refuse storage container that is not leaking, drain plugs and tight fitting lids. Contact the Landlord regarding the extra grease container and extra dumpster. All containers shall be moved onto the asphalt.
3) Resurface or replace the flooring in the walking cooler and freezer.
4) The existing hot water generator is undersized and installed in 1992. Once this equipment is not longer in proper working order and needs replacement, replace the unit with a 80,000 BTU or hire.

Once 1-11 have been completed, contact the KCHD for a pre-licensing inspection. Once the facility passes the final pre-licensing inspection, the application for the FSO license will be issues.
