3717-1-04.4(B) / Cutting surfaces.
Repeat At the time of inspection, the surface of the cutting board on the cold service line was severely scratched and could not be effectively cleaned and sanitized.
Surfaces such as cutting boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. Resurface or discard this cutting board.
3717-1-04.4(B) / Cutting surfaces.
Corrected During Inspection At the time of inspection, observed the surface of a cutting board was damaged and could not be effectively cleaned and sanitized.
Surfaces such as cutting boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced. PIC discarded the damaged cutting board.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
At the time of inspection, observed accumulations of food debris on multiple door gaskets to refrigerated equipment, under the door to the reach in freezer in the bakery area. Observed an accumulation of dust/debris on the door of the ice machine.
Nonfood-contact surfaces of equipment shall be kept clean. Clean this equipment, and provide regular cleaning that maintains all equipment clean to sight and touch.

Date marking procedures appeared sound. Discussed the use of NSF approved equipment in the facility. Pre-existing non-commercial food equipment in the facility is approved for use as long as it continues to function properly and is maintained clean. All newly purchased equipment shall be commercial grade. Contact the City of Kent Health Department for approval before placing any new equipment into use.
