[?] A summary of the violations found during the inspection are listed below.

3717-1-03.1(L) / Package integrity - specifications for receiving
Observed food in packaging that does not appear to protect it from contamination. Observed multiple dented cans of black beans in storage at the time of inspection.
To prevent adulteration, food packages shall be in good condition and protect the integrity of the contents so that the food is not exposed to adulteration or potential contaminants. Discard/ remove dented cans from the facility.
3717-1-04.5(D) / Nonfood-contact surfaces - cleaning frequency.
Observed accumulation of soil residue on nonfood-contact surfaces (interior) of the crescor hot holding units (pizza, deli, dry storage) and bottom shelving in the walk-in cold holding unit at the time of inspection.
To prevent health hazards, nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Clean and maintain the interior of the crescor hot holding units and walk-in.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed non-food contact surfaces of equipment (condensor/fan cover for walk-in cold holding unit and floor mat in walk-in freezer) were dirty at the time of inspection.
To prevent health hazards, nonfood-contact surfaces of equipment shall be kept clean. Clean and maintain the items listed in the observation.
3717-1-04.8(E) / Equipment, utensils, linens, single-service articles, and single-use articles - storage.
Observed single-use articles (plastic utensils) were not properly stored at the time of inspection. Plastic utensils are being stored unprotected.
To prevent contamination, single-use articles shall be properly stored: (a) In a clean, dry location; (b) Where they are not exposed to splash, dust, or other contamination; and (c) At least six inches (fifteen centimeters) above the floor. (3) Single-service and single-use articles shall be stored as specified under paragraph (E)(1) of this rule and shall be kept in the original protective package or stored by using other means that afford protection from contamination until used.
3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
The plumbing system was not properly maintained. Observed leaking handle for the front handwashing sink and leaking faucet for the prep sink at the time of inspection. Rust and build-ups were found in both locations.
To prevent health hazards, a plumbing system shall be properly maintained. Repair,clean, andmaintain the plumbing fixtures.
3717-1-05.4(O) / Using drain plugs.
Observed three outside waste receptacle drains that did not have plugs at the time of inspection.
To prevent health hazards, drains in receptacles and waste handling units for refuse, recyclables, or returnables shall have drain plugs in place. Recommend contacting waste hauler to install drain plugs.

Observed facility well organized and maintained at the time of inspection.
Warewashing machine was not currently in use. Machine shall be de-limed and interior scrubbed and cleaned before using.
Ensure condensation lines from the walk-in units are being directed into a floor drain.
Final rinse temperature gauge shall be in good working order when machine is in use.
Freezer floor is scheduled to be repaired, food will be transport to the high schools freezer (licensed FSO).
The violations documented shall be corrected as soon as possible and will be checked during next standard inspection.
