3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed ready-to-eat foods in the reach in cooler that were not properly protected from contamination by separation, packaging, and segregation (stored under raw eggs).
Food shall be protected from cross contamination by separating raw animal foods during storage, preparation, holding, and display from cooked ready-to-eat food as described in this rule. PIC moved the eggs to storage on the bottom shelf of the prep cooler.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Observed improper storage of food items on the floor of the walk in cooler and on the floor of the small dry storage area behind the walk in freezer at the time of inspection.
Food shall be protected from contamination by storing the food in a clean, dry location, where it is not exposed to splash, dust, or other contamination, and at least six inches above the floor.
3717-1-04.4(B) / Cutting surfaces.
Observed the surfaces of cutting blocks or boards were severely scratched or scored at the time of inspection and could not be effectively cleaned and sanitized.
Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized, or discarded if they are not capable of being resurfaced.
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Repeat Observed an accumulation of dust on the surfaces of light fixtures and pipes in the ventilation hood over cooking surfaces at the time of inspection. Observed an accumulation of food debris in the large dry storage area at the back of the facility at the time of inspection.
The physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. Clean the dust from this area and provide regular cleaning that maintains all areas of the facilities clean.

Pre-existing non-commercial food equipment in the facility is approved for use as long as it continues to function properly and is maintained clean. All newly purchased equipment shall be commercial grade. Contact the City of Kent Health Department for approval before placing any new equipment into use.
