Comments
This RFE has undergone a final pre-licensing inspection and has been approved to be licensed with the understanding that the following will be completed:

1) The back preparation counter will be resurfaced to be smooth, durable, and easily cleanable. Counter will be sealed to the wall.
2) Repair water leak in dry storage room above the rest room door. Manager stated that the building owner plans to redo the roof.
3) Provide at least one person with level 1 person in charge training on each shift.
4) At one person with level 2 certification in Food Protection from ODH.
5) New deli prep cold holding unit is on order Silverking SK6024/C2. Plans are to remove the front display unit Hussman. Replace floors under the old unit before installing the new deli prep equipment.
6) Seal the opening behind the coffee counter.
7) RFE will be restricted to only using prewashed and prepared foods from the supplier because the RFE has not been provided with a proper installed food preparation sink.
8) Finish clean up all the unnecessary items in the back and maintain all dumpster lids closed.
9) develop a defrost schedule and logs to monitor all the cold holding equipment holding TCS foods.

The above items shall be completed within 30 days. Owners are aware that if the above items are not completed before 30 day, the issues will be documented as violations during the standard inspection/30 day.

Okay to operate once a signed application and license fee for the amount of $508 is received by the Kent Health Department.
