3717-1-02.2(C) / Hands and arms: when to wash
Critical Repeat Observed a food employee did not wash hands in situations that specifically require them to do so at the time of inspection.
To prevent contamination, food employees shall clean their hands and exposed portions of their arms before donning gloves for working with food. Correct By: 10-Apr-2015
3717-1-05.3(C) / Backflow prevention.
Critical Repeat Observed a direct connection between the sewage system and a drain originating from equipment in which foods are placed. The food preparation sink was not provided with a proper 2 inch air gap at the time of inspection.
To prevent health hazards, a direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed unless allowed by the Ohio building code. Provide a proper 2 inch air gap on food preparation sink drain to prevent the possible contamination to ready to eat foods. Correct By: 10-Apr-2015

3717-1-02.2(G) / Jewelry - prohibition.
Repeat Observed food employees wearing jewelry (multiple rings) on hands during food preparation at the time of inspection..
To prevent contamination, except as provided by (G)(2) and (G)(3) of this rule, food employees may not wear jewelry on their arms or hands. Only a plain ring or a medical bracelet is approved to be worn by employees while working with foods.

Overall, the facility appeared very clean. Wiping cloths were properly stored in sanitizer buckets. Lunch tables are cleaned with soap and water, rinsed, and then sanitized after use. The service sink water supply was protected against backflow with an approved ASSE backflow prevention device.
Discussed appropriate times when handwashing is required. A food employee stated that hands were washed after using the restroom. This is good. However, hands shall also be washed upon arrival to work and before foods or utensils are handled. The kitchen is properly supplied with a handwashing sink for this purpose.
Please be aware that items of jewelry such as rings, bracelets, and watches may collect soil and the construction of the jewelry may hinder routine cleaning. As a result, the jewelry may act as a reservoir of pathogenic organisms transmissible through food.
