3717-1-02.4(C)(14) / PIC: duties - ensure employees are properly trained in food safety, including food allergy awareness.
Critical Person in charge did not ensure their employees are properly trained in food safety. Multiple critical violations were observed (date marking, chemicals, raw meat storage) that indicates a lack of employee training for proper food safety. Education was provided to improve procedures.

3717-1-05.1(O)(2) / Using a handwashing sink - other uses prohibited.
Critical Handwashing sink is being used for purposes other than handwashing. A cooking strainer was stored in the hand washing sink. Education was provided to improve hand washing sink usage.

3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Repeat Food not properly protected from contamination by separation, packaging, and segregation. Raw meats were stored over RTE foods in the cold holding units. Education was provided about proper raw meat storage.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Repeat Refrigerated, ready-to-eat, TCS foods not properly date marked (shrimp, meatballs, crab, lettuce). Education was provided to improve date marking procedures.

3717-1-07.1(C) / Poisonous or toxic materials: Conditions of use.
Critical Improper use of a poisonous or toxic substance. Unapproved pesticide used to combat roaches was stored near the ice machine. Education was provided to the PIC about proper pest control procedures.

3717-1-07(B) / Poisonous or toxic materials: Working containers - common name.
Critical Working containers of poisonous or toxic materials not properly labeled (chemical spray bottle). Education was provided to improve chemical labels.

3717-1-06.1(M) / Outer openings - protected.
Outer opening not protected. Rear kitchen door was propped open for an extended time during inspection allowing for potential pest intrusion.

3717-1-03.2(Q) / Food storage - preventing contamination from the premises.
Repeat Improper storage of food items on the floor of the freezer and dry storage.

3717-1-02.3(C) / Hair restraints - effectiveness.
Food employee not wearing a hair restraint.

3717-1-03.2(G) / Washing fruits and vegetables.
Raw vegetables not washed prior to cutting and preparation.

Repeat Equipment not approved by a recognized testing agency (non-commercial rice cooker and food storage containers).

Repeat Improper disposal of condensation into the parking lot from the cold holding unit.
