[?] A summary of the violations found during the inspection are listed below.

3717-1-02.4(C)(11) / PIC: duties - ensure employees are proplery sanitizing cleaned equipment and utensils
Critical Corrected During Inspection PIC not ensuring employees are properly sanitizing equipment and utensils and monitoring of sanitizer parameters. Observed sandwiches being cut in half at the end of the prep table and surface is not being warewashed every 4 hours. PIC instructed employees to start cutting on cutting board to allow for easy cleaning and sanitizing every 4 hours.

3717-1-02.2(G) / Jewelry - prohibition.
Food employees wearing jewelry on arms or hands during food preparation.

3717-1-04.4(A)(2) / Equipment components kept intact, tight, and adjusted
Repeat Equipment components are not intact, tight or properly adjusted. Observed the condensation line in the walk-in freezer to be leaking with ice accumulation.

3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed an accumulation of food residue and debris on the exterior non-food contact surfaces of the slicer (date plate and back side of equipment).

3717-1-06.4(A) / Repairing.
Repeat Physical facilities not maintained in good repair. Observed multiple holes and damaged drywall behind the 3 compartment sink where the old chemical supply equipment and signage was provided. Repair walls to be smooth durable and easily cleanable.

3717-1-06.1(C) / Floor and wall junctures - coved, and enclosed or sealed.
Floor and wall junctures not properly coved or closed. Observed damaged caulking around mop sink. Observed damaged covebase under the hand sink in the warewashing area. Observed damaged covebase at the start of the deli ordering.

Opened containers of milk and creamers shall be date marked for 7 days unless used within 24 hours.
The violations documented shall be corrected and will be checked during next standard inspection.
