3717-1-04.1(KK) / Food equipment - certification and classification.
Observed equipment (freezer, fryers, blender, keurig, microwave, etc.) not approved by a recognized testing agency at the time of inspection.
To prevent health hazards, food equipment that is acceptable for use in a FSO shall be approved by a recognized food equipment testing agency. Approved commercial equipment shall be used in the FSO.
3717-1-04.2(H)(2) / Temperature measuring devices - mechanical warewashing.
Observed a missing irreversible registering temperature indicator (thermometer or labels) for the hot water mechanical warewashing machine at the time of inspection.
To ensure proper sanitizing, a temperature measuring device is essential to monitor mechanical ware washing to ensure sanitization. Provide stickers or a maximum reading thermometer.
3717-1-04.5(A)(3) / Cleanliness of nonfood-contact surfaces of equipment.
Observed an accumulation of food debris in the interior of the bottom section of the true reach-in cold holding unit at the time of inspection
To prevent health hazards, nonfood-contact surfaces of equipment shall be kept clean. The interior of the true cold holding unit shall be cleaned and maintained.
3717-1-04.8(G) / Kitchenware and tableware - handling.
Observed single-service or single-use articles (drinking straws) were not handled, displayed, or dispensed properly at the time of inspection.
To prevent contamination, single-service articles or single-use articles shall be handled, displayed, and dispensed so that contamination of food-contact-and lip-contact surfaces is prevented as described in this rule. Provide straws that are either wrapped or a dispenser that provides proper protection.
3717-1-05.1(Q) / Scheduling inspection and service for a water system device.
Repeat Observed a water treatment device for the ice machine not inspected or serviced as required at the time of inspection.
To prevent health hazards, a device such as a water treatment device shall be inspected and serviced in accordance with manufacturer's instructions and as necessary to prevent device failure, and records demonstrating inspection and service shall be maintained by the person in charge. The water treatment device shall be inspected and serviced.
3717-1-05.1(S)(2) / Plumbing system - maintained in good repair.
Observed the plumbing system for the back hand washing sink was not properly maintained at the time of inspection. Hot water could not be used at sink because of a leak in the water line.
To meet the requirements of this rule, a plumbing system shall be properly maintained. Repair hand sink to be in good working order. THe FSO shall use other handsinks to ensure proper handwashing
3717-1-06.4(B) / Cleaning - frequency and restrictions.
Observed a build-up of dirt and debris on the floors of the walk-in cold holding units, the walk-in freezer, and the area around the floor drains underneath the bar at the time of inspection.
To prevent contamination, the physical facilities shall be cleaned as often as necessary to keep them clean, and cleaning shall be done during periods when the least amount of food is exposed. The areas listed above shall be cleaned and maintained.
