Person-In-Charge demonstrated excellent knowledge in food safety and was able to answer questions correctly.
All TCS foods shall be properly date marked for a 7 day discard.
All foods shall be properly stored based on the minimal cooking temperatures.
Observed facility to be clean.
Chemical sanitizer dispensing equipment shall be tested with proper testing kits daily.
Temperature measuring devices shall be calibrated properly daily.
Ware washing dish machine was observed to be properly maintain and in proper working order. Provide Dishwasher Temperature Test Strips to monitor the dishwashing machines final rinse temperatures. Recommend Temp Rite 875.
