3717-1-03.4(I)(1)/Time as a public health control - written procedures
No written procedures for time as a public health control. Observed waffle batter being stored in a unit that is not a mechanical refrigeration unit. TCS products held on ice at the monoglian grill area shall be included in the procedure.
3717-1-03.5(E)/Consumer advisory.
Consumer is not properly advised of the risk of consuming raw or undercooked animal foods. Eggs are being cooked based on customers preference and may be undercooked.
Comments
Per discussion with the PIC, the consumer advisory for the made to order eggs during breakfast hours will be transferred to the menu board. Currently, there is a sign with a consumer advisory that is also acceptable.
The time as a public health control (tilt) procedures shall be maintained in the facility and made available upon request. The breakfast TCS products held on ice and the waffle mix are included in procedures.
