Critical Corrected During Inspection Food not properly protected from contamination by separation, packaging, and segregation. Raw eggs and raw meat were stored over RTE foods in the cold holding units. The PIC was able to move the items once the violation was identified.

Critical Corrected During Inspection Equipment food-contact surfaces or utensils are unclean (deli slicer). The PIC immediately cleaned the equipment once the violation was identified.

3717-1-03.4(G) / Ready-to-eat, time/temperature controlled for safety food - date marking.
Critical Refrigerated, ready-to-eat, TCS foods not properly date marked (shrimp, lettuce, sprouts, beef, meatballs, etc.). Education was provided to improve date marking procedures.

Working food containers not properly labeled (sauces, spices, dry goods, etc.).

Improper storage of food items stored on the floor of the cold holding units.

Equipment and utensils are not being air dried. Ware washed food storage containers were stacked together wet without proper air drying.
