Critical Corrected During Inspection Observed bag of mushrooms in the upright cooler with no date mark at the time of inspection. PIC immediately corrected violation by placing proper date mark on the mushrooms since they were put in two days ago. Refrigerated, ready-to-eat, TCS foods not properly date marked.

Observed torn gaskets in the lower part of the prep cooler at the time of inspection. Equipment components are not intact, tight or properly adjusted.
