Critical Corrected During Inspection Written procedures and plans are not maintained and implemented. The employee did not temp the chicken out of the frier. The owner stated the employee recieved a verbal warning. The owner is aware of the serious health effects from consuming raw chicken.

Comments
Received complaint that the person received a raw chicken patty. Made visit and spoke with the owner in regards to complaint. He was aware of the complaint and stated that an employee pushed the wrong button on the frier, so it did not get cooked for required time. Also stated that they are to temp the patties after they come out of the frier, but that did not happen as they were short staffed that evening. Discussed what to do in that situation to prevent this from happening again, i.e. extra training, write ups, closing down if not enough employees, etc. The manager verified the equipment is working properly while the inspector was watching.
