Corrected During Inspection Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable. Observed new upright cooler without internal thermometer. COS.

Repeat Corrected During Inspection Equipment components are not intact, tight or properly adjusted. Observed buildup of ice in walk in freezer on ceiling and door. Observed ice removed from walk-in. COS

Corrected During Inspection Nonfood-contact surfaces not easily cleanable. Observed rusty shelving in walk in cooler that is not easily cleanable. PIC ordered new shelving for cooler.

3717-1-04.4(P) / Warewashing equipment - determining chemical sanitizer concentration.
Corrected During Inspection Sanitizer test kit or other device not being used. Observed wrong test kit being used for mechanical warewashing machine. COS. PIC purchased the correct test strips for the machine. However, the sanitizing tablets are not feeding correctly. PIC put call in to Ecolab to fix dishwasher. The action plan is to use the three compartment sink for wash/rinse/sanitizing needs.

Corrected During Inspection No drain plugs in waste receptacle. Observed both dumpsters without drain plugs. PIC called dumpster service to get drain plugs in dumpsters.

Corrected During Inspection Floors, walls, and/or ceilings not smooth and easily cleanable. Observed buildup of debris on floors. PIC swept and mopped floors.
