3717-1-03.2(C) / Packaged and unpackaged food - preventing contamination by separation, packaging, and segregation
Critical Corrected During Inspection Observed items in coolers without lids on them during the time of inspection. Food not properly protected from contamination by separation, packaging, and segregation. PIC placed lids on the items during the time of inspection.

3717-1-03.4(F)(1)(b) / Time/temperature controlled for safety food - cold holding.
Critical Corrected During Inspection Observed front cooler to not be holding items at the proper temperature during the time of inspection. TCS foods not being cold held at the proper temperature. PIC knew the time these foods were prepped, and they have a standing time as a public health control policy, so these items were marked for four hours from the time they were prepped during the time of inspection.

3717-1-04.1(Y) / Temperature measuring devices.
Did not observe internal thermometers in hot holding units during the time of inspection. Hot and cold holding equipment thermometer was missing, located incorrectly, or not easily readable.

3717-1-03.5(C)(2) / Food labels - packaged food
Observed packaged foods at front counter to not have net weight on them during the time of inspection. Label on a food packaged in-house did not contain all required information.

3717-1-03.2(D) / Food storage containers - identified with common name of food.
Observed granulated powder containers that did not have common names on containers during the time of inspection. Working food containers not properly labeled.

3717-1-04.8(E)(3) / Single-service articles and single-use articles - storage.
Corrected During Inspection Observed single-use items that were not inverted throughout the facility during the time of inspection. Single-service and single-use articles not protected from contamination. PIC inverted them during the time of inspection.
