Discussed HACCP plan with Chris to use time in leu of temperature for cold holding foods at salad bar/ hot holding pizza and subs at pizza bar. Discussed the detailed requirements for HACCP plan approval. Salad bar and pizza bar will be utilized Thurs through Sunday, 11am - 7pm. Operator not using/not authorized to use time in leu of temperature as of today's date. Operator plans to have HACCP plan ready to submit within the next few days. |
